When dissolved in water, the temperature of the sodium nitrate solution decreases and the solution becomes neutral. When heated, sodium nitrate easily decomposes into sodium nitrite and oxygen. Sodium nitrate can aid combustion and must be stored in a cool and ventilated place. Sodium nitrate has oxidizing properties and can cause combustion or explosion by friction or impact with organic matter.

Colorless rhombic lozenge or white with yellow rhombic lozenge, a little bitter taste. Easy to deliquescence.
